Waste reduction can be key to saving your restaurant money and changing the way your business affects the world around you. Large scale and chain restaurants often throw everything away – food, packaging and anything else – with little regard as to whether or not it can be recycled, donated, composted or otherwise repurposed. But as the little guy, or a restaurant owner with strong principles, you can’t afford, nor do you want, to be that way.

Reducing restaurant waste can take a little effort, but you can institute some very cool policies in the meantime! If you have the space, consider starting a composting program on-site. Ideally you can use the finished products on your own gardens or any landscaping you have around the restaurant. Another great idea is partnering with a local farm that might be able to use food waste to feed animals, or for their own compost needs.

Alert your customer base about your efforts in waste reduction. Post signs that show your commitment and train your staff to be educated on the benefits of your policy so they can answer any customer questions. Lastly, be very intentional about using what you do have. Make specials a creative way to use up “leftovers” and think twice about whether food can be used for something other than the originally intended recipe before you chuck it in the trash.
