Do your restaurant dishwashing needs require hot hot water? Considering a high temp dishwashing set up? Wondering if you should go with the low temp option?

When it comes to commercial dishwashing needs, the options are generally between low and high temp dishwashers. Low temp washers require sanitizing chemicals to get things clean. High temp set ups require that hot hot water. Specifically, the water must be heated to 180 degrees Fahrenheit, however normally your water heater should be set not to run about 120 degrees. So how do you get the hot water needed to sanitize those dishes? The answer: a booster heater.

Booster heaters do just what it sounds like – they boost the water temps temporarily so you get that 180 degree water you need. The heaters themselves can be either gas or electric, depending on what’s best for your needs. In general the gas versions are cheaper to run, and require less maintenance – which basically means you save money in the long term by going with gas. However, the electric units are cheaper to purchase up front, and do not require venting which can save a lot when it comes to your buildout. They also take up less space.

To Boost or Not to Boost?

If you want to go with the high-temp warewasher, a booster heater is for you.

In the business we like to avoid using the common (albeit misguided) term “hot water heater.” We prefer plain ol’ water heater. Why? Because “hot water heater” is redundant. Think about it: you don’t need to heat already hot water; you need to heat regular tap water. Get it?

But there’s one situation where “hot water heater” actually makes sense: when we’re talking booster heaters. Booster heaters “boost” already heated water (between 120°F and 140°F) all the way up to that 180°F your restaurant or other commercial application needs to sanitize without the use of chemicals.
